What do you do with blueberries?

I'd like to share a really simple and kickass cake recipe. It's amazing, and easy, and freezes like a dream! It's a cake that will forever remind me of my childhood. It's perfect for BBQ season. Or in my case, perfect for fathers day as my hubby loves it! And it's the only way he will eat blueberries!

1/4lb butter
3/4 cup sugar
1egg
1/2 c milk
1 t vanilla
2 c flour
2 t baking powder
1/2 t salt
1 pint blueberries

Cream butter and sugar. Add egg. Beat until fluffy. Stir in vanilla and milk. Stir in flour, salt and baking powder. Fold in blueberries. Spoon into greased 9x9 cake pan.

Topping
1/2 c sugar
1 T butter
1/2 t cinnamon
Mix all together lightly with a fork. Spread on top of cake batter.

Bake at 350 for 50 minutes.

OOO, I will make this this next weekend! I am participating in a Bake off next week, I am actually running it, so I cannot compete, but I did promise to take something. I was thinking about something with Blueberries!

Thank you for sharing.

I like blueberries fresh.. With Fresh whipped cream! There was a cafeteria here that used to make a fresh Blue Berry pie, it kind of had a light glaze, but the berries were fresh! I still crave that pie. The closed and I never got that recipe. Never have been able to find anything else like it.

We tend to eat them as we pick them off the bushes!
We sometimes get enough for a pie.
They are easy to use in smoothies.
They are also good in cereal, on/in waffles/pancakes/muffins.

Thank you, I am going to try this!!
I love blueberry pancakes! I craved them during both pregnancies and had them at both of my "last meals" before delivering my kids, so they hold a special place in my heart :)

I make that cake too. I got the recipe from a German cook book and call it kuchen. I also make it with plums.

I use blueberries for pancakes, muffins, pies and add them to apple crisp for a change.

We'd make purple cows in my child care center. The kids didn't touch them the first time "I" made them. The next time we had them on the menu the kids go to do the adding and then they were excited about tasting them. They loved them after that.

I can't remember putting yogurt in ours, it's been years now, but I do think it was milk, a little ice cream, and blueberries. Seems like there was another item but I can't remember.
