Cake Recipe for Mom with Gestational Diabetes

Hi fellow mommas. I'm in charge of baking a cake for a baby shower where the mommy to be has been diagnosed with gestational diabetes. I'm looking for a good sugar free recipe that you have tried before. There are a few recipes I've found online, but since I'm a Celiac, I can't taste test prior to the shower. Thank you in advance for your help!

It is not just about the "sugar" in recipes, but about the "glycemic index" of foods.

My Dad was a Diabetic.

Also, when you make the cake and have it at the party... I would, on a cute little index card, note down the food exchange for it and the glycemic index on it, etc. For her. And then place the cute little food info index card, next to the cake.

Have you thought of an Angel Food Cake? Check that one out and see if it works. Then you could serve strawberries and sugar-free whipped cream. (Or something like that!)

Angel Food Cake

1 cup cake flour
1 teaspoon cream of tartar
1/4 cup sugar twin
1 cup egg whites (8 to 10 eggs)
1/2 teaspoon vanilla extract

Sift 1/8 cup Sugar Twin and flour together four times. Beat egg whites and cream of tartar until foamy. Add remaining sugar a little at a time, beating in well. Add flavorings and beat until very stiff. Fold flour into egg white and sugar mixture, sifting small amounts at a time. Pour into 10-inch ungreased tube pan. Cut through with a spatula to remove air bubbles. Bake at 275 degrees for 30 minutes, then raise the heat to 300 degrees and bake until done. Invert pan over bottle neck for one hour before removing form pan. Makes 12 servings.

(I have not made any of these, I want to make sure to say. I buy mine from the store pre-made, but have no diabetics to worry about.)

If gestational diabetes is like diabetes it is not about the sugar, but the carbohydrates. I imagine there are plenty of carbs in anything with flour. In my book just make a regular cake and warn the birthday girl. Serve the cake about two hours after a meal, and 2 hours before the next meal and let Mama have a a sliver...... not too much.

I had gestational diabetes & could eat cake/sweets....as long as my #s were good. I worked with a dietician & was able to avoid meds...! The whole key to this is......portion control.

My DH was diagnosed with diabetes about 10 years ago. Again, portion control is the answer. This wkend we had a Mississippi Mud Cheesecake, & as long as he stuck to slivers of cake...he did well with his #s.

The major food companies do offer a no-sugar-added/sugar-free cake mix & frosting. Also I substitute Splenda for sugar in my products. It works....dries it out a little, but works.

& honestly, a bowl of fruit will trigger her as quickly as a sweet will!

I don't know how much this helps, but you can make a box cake mix by adding a can of diet soda to it. You don't use the eggs, water or oil, just the can of diet soda. It comes out super moist, but you need to really spray/flour the cake pan. (you use diet sprite for light colored cakes and can use diet coke for dark)

They also make sugar free cake mixes and sugar free frostings.
