I found these potatoes at the grocery store the other day. They're REALLY tiny (about the size of a large marble). My kids will eat anything "cute"!!! So I boiled those and they're ready for some serious butter drenching when we get home from swim practice. I also have a ham steak in the fridge - I'll just cook that up in a pan on the stovetop. Maybe some carrots too. DONE! (and seriously, I can't wait to eat my cute potatoes!)

My dad makes a chicken, rice, and Liption Onion Soup casserole thing. I made it for my family the first time in August - it was a huge hit! So that's dinner tonight. It literally takes 5 minutes to put together and then it's ready 45 minutes later.

I'll steam a green vegetable to go with it and call it good.

I'm making enough so I don't have to cook tomorrow night either. We'll have leftovers of this and taco salad from last night.

It all sounds wonderful! I've been in the hospital a few days and all I've had is broth. I've graduated today to liquid potato soup.

It doesn't sound awesome, but... Kidney beans (cooked for about 4 hours with hamburger, onions, seasonings and sugar) served over fried potatoes and onions with corn on the cob. By cooking the canned kidney beans so long with a little sugar, salt, and the meat/onions for so long, it makes them super tender and the juice thick. My family loves it. :)

steak, salad and baked potatoes. Other options in our house:
1. tomato soup and cheese bread w/ salad
2. chicken breast with BBQ sauce and tater tots some green veggie
3. Chicken w/ Teriyaki sauce and rice with a frozen stir fry veggie bag
4. Pizza (home made, ordered, picked up, dining out...We love it).
5. Sushi (kids like miso soup, BBQ eel and other cooked items)
6. deli sandwiches (ham and cheese for one turkey for the other) and some chips
Oh how can I forget dinobites (chicken nuggets), turkey corndogs or BPJ for the kids when we have something they truly dislike.

I'm having leftovers...it's a mexican lasagna. Cut tortilla strips and do alternating layers of beans, cheese, sour cream, green chile, keep layering till pan full. Everyone at my house likes it.

I had a ham lunch meat on a wrap, my husband made a personal pizza for our youngest, my oldest made herself a frozen breaded chicken breast and I think my husband had leftovers from his lunch... It was not a family dinner night. Kids had stuff to do and I was designated driver and just got home at 8:30.

Left overs: mushroom tacos and carnitas.

Btw, enchiladas freeze great, and when I make chicken pot pie, i triple the recipe. You can cook from frozen, just add 30 minutes.

I don't know yet. It will be something with chicken breasts because that is what I have ! Got any ideas on how to cook them ? BTW - enchilada's sounds good !

Nice post and now I am getting hungry.

Since we both had a relative large lunch today, we are going light.

I have sliced grape tomatoes red and yellow, sliced sweet onion, sliced cucumber all mixed together with a little olive oil, salt, pepper, sugar to taste and then mixed with apple cider vinegar. Mix all together and let it sit a while and we make a meal on it. Just when I serve my portion, I add mozzeralla or feta cheese. I love the tartness of this salad.

I am still having leftovers of red pinto beans crock pot cooked with ham hocks and cornbread. I made way too much and my dogs are enjoying some ham/beans with their dinner as well.

Homemade taquitos since that is what is in the freezer. I like the recipe from Ourbestbites.com and based these off that recipe. They are stuffed with smoked pulled pork, corn, beans, chilis, cheese, cream cheese and a ton of spices.

We had crockpot chicken last night. Can of cream of mushroom, can of cheddar cheese and salt pepper and garlic salt. I made rice to go with it. Tonight it might be breaded pork chops.

I defrosted two pieces of fish for me and my daughter - hubby and son won't be here - now I'm trying to figure out some different way to cook them. I usually just throw on a little seasoning and some butter and toss them in the oven but I want something different!! Any ideas out there??
