Looking for Healthy Crockpot Recipes

I am starting to work outside of the house more and I need to be able to feed my family healthy foods relatively easily. I would love to be able to throw dinner in the slow cooker in the morning and be ready to eat in the evening. Lots of the recipes I've seen call for beef, which isn't so healthy. Does anyone have recipes that involve chicken, fish, pork or are vegetarian? Thanks in advance for sharing!

Vegitarian chili (super easy)

combine in your crockpot
1 choped zuchini
1 choped onion
2 cans stewed tomatos and their juice (I usually get the ones with jalipanos in them)
1 can each of the following veggis, drained: black beans, garbanzo beans, whole kernal corn (smaller can for the corn)
1-2 T chili powder
salt and pepper to taste

put all this on low for 3-4 hours or high for about 2.

it's very good but the left overs are even better the next day.

Our favorite recipe is crockpot fajitas. It makes quite a bit - enough for another meal!

In crockpot layer:
2 chicken breasts (frozen is okay)
2 cans beans (kidney and/or black bean - any combo)
1-2 cans diced tomatoes (I use two for my big family)
1 bell pepper, chopped
2 TB Taco Seasoning (or to taste)

Cook on low for 8 hours, or high for 4 hours.
Serve on tortillas with sour cream, salsa, guacamole, etc. Optional: add chopped lettuce for an extra veggie.

Hi, My mom is hooked up with an organization that sends a lot of Crockpot Recipes. One website is http://www.my-crockpot-recipes.com/ Scroll down the page and on the left hand side there will be a list of main dish items to click on. I have tried a chicken with rice and it was great. I have enclosed a couple recipes to look at but have not tried them. Good luck.

A crockpot chicken noodle soup, with chicken, onions, carrots, celery, and
noodles.

INGREDIENTS:
List of 13 items
• 2 1/2 to 3 1/2 pounds chicken pieces
• 4 cups water
• 4 cups chicken broth
• 1 teaspoon seasoned salt
• 1 teaspoon salt, or to taste, depending on saltiness of broth
• 1/4 teaspoon pepper
• 1 leek or small onion chopped
• 1 carrot, chopped
• 2 stalks celery, chopped
• 1/4 cup parsley, chopped
• 1/2 teaspoon dried marjoram or basil
• 1 bay leaf
• 6 ounces noodles
list end

PREPARATION:
Place all ingredients except noodles in the Crock Pot. Cover and cook on low
for 5 to 6 hours. Remove chicken and bay leaf from pot; take meat from
bones,
dice, and return to broth, and add the noodles. Cook another hour or until
noodles are done (about 1/2 hour on high). Or, cook the noodles separately
and
add them just before serving.

> Crock Pot Butternut Squash with Cream and Thyme

> 3 pounds butter nut squash, peeled and cubed
> 1 cup onion, sliced
> 1/4 cup butter
> Salt and Pepper to Taste
> 1/4 cup cream
> 1 TBSP. fresh thyme

> Place squash in saucepan with salted water to cover generously and bring
> to boil. Cook for 5 minutes. Then drain.

> Place squash, butter, onion, salt and pepper, and cream in slow cooker.
> Cook on low setting for 6-8 hurs. One hour before squash is expected to

I have 6 kids and go to google to crockpot recipes and about.com has thousands!
It is amazing-i hate to cook and its a great healthy cheat for me because its so simple-good luck with it all! We have a great group of moms out here if u ever need anything!

Allright, this is so easy and my kids and husband love it.

I buy a prepackaged 2 or 3 lb turkey breast and throw it in the crockpot with 2 cans of chicken broth, about three potatoes (sliced into chunks), carrots, green beans, and about 1 cup of barley. I cook it on high for 4 hours or low for at least six. It is delicious! Bonus for the 7 month old...the longer you cook, the mushier it gets, so nothing will be too hard or chunky for her!!!! When you're ready to serve, I just take out the turkey and shred it into individual bowls of the soup mixture. Enjoy!

There is an awesome book out there called "Fix it and Forget it". I use recipes from it all the time. If you would like me to share a recipe or two out of this book let me know. One of the recipes is "slow cooker lasagna".

We do a simple vergetarian soup.
-2 Vegetarian vegetable boullion cubes
-4 cups water
-1 bag baby carrots
-3-4 medium potatoes chopped
-1 can green beans
-1/2 head cabbage chopped
-1 medium yellow onion chopped
-1-2 cloves garlic
-Salt pepper as desired
Cook on low all day.
SOOOOO Yummy and FAT FREE!
