Please share your simple, nutritious meal ideas.
I am looking to add a few more items to my kids' menu.
They are not too picky.

I made this "cookbook" myself with other people's recipes. This is my favorite site ever!! Some of them are my recipes and are very good for both kids and parents. They are all kid friendly.

Hi, I used to give my girls eggs and they would never eat them, so I took a piece of bread and cut a hole in the middle. I would use cookie cutter to do this as they got to chose if they wanted a duck or heart. Put butter on the bottom of bread and place in to a frying pan. Coat the side that is now showing, then place the egg in the middle of the bread. cook until the white is all most done and flip the bread. You have just made a fun meal they will eat. I would also cook the piece that was taken out so that they could eat the duck or place it on to the bread.
I would also use the cookie cutter on pancakes with a little cup (like you get when you order pizza) and put sugar free syrup beside the plate to dip the pancakes with. They use less syrup an love to eat the pancakes. I also wuold add carrots in the pancakes so they had a bit of veg with them.

My boys love mashed potato hotdogs! I get the frozen mashed potatos fro Orida. Make hotdogs, on the bun, and top with cheese and mashed potatos. Easy, quick and they love it!

Burritos in whole wheat or whole spelt wrap. I usually put refried beans with scrambled eggs. Sometimes i don't even heat the beans. I put onion in mine but not my child's.
Hummus and veggies like carrots, celery, cukes.
Raw extra firm tofu with soy sauce.
Beans and rice.
Quinoa (pronounced keenwah)and steamed vegetables.
Split pea soup with some kind of bread.
Can you tell I'm vegetarian?

Grilled chicken pasta.
In a skillet heat some EVOO and saute, some chopped onion, garlic, mushrooms, green olives. To that add some thinly sliced chicken that's been seasoned with paprika, oregano, basil, tiny bit of cinnamon, salt and pepper. Cover with a lid and cook through.
In another pot boil salted water for curly whole wheat pasta.
Once you have the pasta cooked through, go back to your chicken mixture and and to it 1/3 of a jar of your favorite spaghetti sauce and 1/3 cup of milk, mix thoroughly turn the heat off and put the lid back on.
You can serve garlic bread or what ever you choose and we make a salad out of fresh spinach leaves and a raspberry vinagerette dressing.

It was just recently I was looing for new ideas to cook for my family. I came across campbellskitchen.com. So far I have fixed a couple of recipes off their website, and my kids as well as my husband have enjoyed.
(These recipes are quick and easy. Most of ingredients you already have in your cupboard!)
