I am looking for new and healthy recipes for my 18 month old son. He won't eat vegetables, so I am looking for good ways to make them or hide them. Any ideas?

Hi K.,

Try adding just a tad buti of honey to the vegetables. It sweetens them up. Maybe with the semi-sweet taste he will eat them and then you can cut back on the tad bit and he eats the without the honey.

Just a suggestion.

Jerry Seinfeld's wife, J. Seinfeld has a cookbook in book stores that is AMAZING!! It is called "Deceptively Delicious." It has many, many recipes like cookies, chicken nuggets, brownies, and several other kid favorites, but you put pureed vegetables in the food. That way your kiddies get to eat their favorite foods, which are great for them.

Yeah i remember those days. If he likes mac n cheese you can add veggies in there. Mash potatoes works really good too. Even rice. I got my son to eat them if i showed him I put a little butter, salt and pepper on them. He also likes the mixed veggies, better variety made it taste better. Good luck!

When it got tough to get my kids to eat veges, I had my children help make dinner for Mommy and had them taste test during the process so they got veges before they even knew they were doing it.
-Pizza is a great food to hide finely cut veges it - or pureed in the sauce.
Vege juice mixed with fruit juices as in a juicer.
Peanut butter on celery, ranch on carrots, all work at some stage with my children.

Don't cover veg with butter & cheese, defetes the purpose of eating them and starts bad habits. Last months Prevention magazine talked a lot about adding puree's to other foods. Add frozen spinach to pasta sauce, salsa... you can hide a lot of veg in healthy sauces. Shred carrots, zuccini... go well in lazagna... Mash up cauliflower or lima beans to add to mashed potatoes. Yams are healthier than carrots and kids like the sweetness.

My daughter would eat spaghetti with tomato sause and I would add finely chopped or pureed veggies to the sauce. She couldn't get enough.

Vegetables are tough. My experience is to find the ones they like and stick with them. I've covered broccoli with cheese and been pretty successful. My favorite are brussel sprouts which most people hate, but 2 of my kids have come to like them as well. Now I have to compete with them to eat them!! Lots of butter or cheese can help a lot of vegetables. Corn is usually one kids really like. Carrots too, either raw or cooked. You can put a little cinnamon on cooked carrots to make them taste better; and ranch dressing for the raw ones. Some kids like canned beets; but they stain horribly. I think some might be packed in syrup instead of water, and others are pickled. I only tried the water ones. One of my kids really likes creamed corn too. Green beans are the ultimate favorite; my kids will eat them right out of the can. I prefer fresh but they prefer canned.

I can't think of anything else at the moment; its been a while since I had to disguise vegetables. My kids are older now (24, 19, 17, 13, 13)

Hi! have you heard of deceptively delicious? It is by Jessica Seinfeld and has all these recipes where she has figured out how to integrate vegetables... even brownies! I haven't tried any, but I have heard great things.

one of the things i do is when i make speghetti sauce, i shred carrots, zuccini, onions, mushrooms, celery, eggplant and replace the meat. they cannot tell the difference. sweet potatoes is good as well, you can bake them like a baked potatoe and just scoop the inside when done, they are naturally sweet if they eat soups, i have make leek soup using low sodium chicken stock, lasagna using the above sauce, in the with the ricotta cheese, mix in chopped spinich, i have been lucky where my kids are good with veggi's, vegitable soups they have always enjoyed. hope some of this helps
