Seeking Cranberry Pie Recipe

Hi, Ladies! My friend's father is originally from Canada and wants a Cranberry Pie for Christmas dinner. Does anyone have a recipe for one? We almost lost him Thanksgiving week and he's still in the hospital recovering ... I'd really love to make one for him.

I've really never heard of cranberry pie... so I had to look this one up. I'll give you some and maybe you can find the one that will fit your friend's father's request.

crnaberry pie recipe
Ingredients
1 1/4 cups cold milk
2 (4 serving size) packages JELLO-Brand Instant Cheesecake Pudding & Pie Filling
1 (8 ounce) tub COOL WHIP Whipped Topping, thawed, divided
1 (16 ounce) can whole berry cranberry sauce, divided
1 (6 ounce) HONEY MAID Graham Pie Crust
1/2 cup chopped toasted PLANTERS Walnuts
Directions
1.Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. (Mixture will be thick.) Gently stir in half of the whipped topping.
2.Spread half of the pudding mixture onto bottom of crust; cover with half of the cranberry sauce. Sprinkle with walnuts; cover with remaining pudding mixture.
3.Refrigerate several hours or until set. Top with remaining whipped topping just before serving. Garnish with fresh cranberries, if desired. Serve with remaining cranberry sauce. Store leftover pie in refrigerator.

Ingredients
1 cup all-purpose flour
1 cup white sugar
1/4 teaspoon salt
2 cups cranberries
1/2 cup chopped walnuts
1/2 cup butter, melted
2 eggs
1 teaspoon almond extract
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan.
2.Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan.
3.Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.

cranberry crumb pie

Ingredients
1 (9 inch) unbaked pie crust
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/4 cup lemon juice
3 tablespoons light brown sugar
2 tablespoons cornstarch
1 (16 ounce) can whole berry cranberry sauce
1/4 cup butter, chilled and diced
1/3 cup all-purpose flour
3/4 cup chopped walnuts
Directions
1.Preheat oven to 425 degrees F (220 degrees C).
2.Bake unbaked pie crust in the preheated oven 8 minutes. Remove from heat. Reduce oven temperature to 375 degrees F (190 degrees C).
3.In a large bowl, beat cream cheese until fluffy. Mix in sweetened condensed milk until the mixture is smooth. Stir in lemon juice. Transfer to the pie crust.
4.In a small bowl, mix 1 tablespoon light brown sugar and cornstarch. Mix in whole berry cranberry sauce. Spoon the mixture evenly over the cream cheese mixture.
5.In a medium bowl, mix butter, all-purpose flour and remaining light brown sugar until crumbly. Stir in the walnuts. Sprinkle evenly over the cranberry mixture.
6.Bake 45 minutes in the 375 degrees F (190 degrees C) oven, or until bubbly and lightly browned. Cool on a metal rack. Serve at room temperature, or chill in the refrigerator.

Hello and Merry Christmas. I know I'm late but my friend from Canada sent this one for Cheesecake.

Cranberry Orange Cheesecake

1 cup graham wafer crumbs
1/4 cup butter melted
3 pkgs (250 g each) cream cheese, softened
1 cup white sugar
2 tbsp cornstarch
3 eggs
3 tbsp orange juice
1 cup chopped fresh or frozen cranberries
1 jar orange marmalade

Preheat oven to 350̊F. In a small bowl, combine crumbs and butter; press firmly on bottom of 9" spring form pan.

In a large bowl, beat cream cheese, sugar, and cornstarch until very smooth. Add eggs, one at a time, beating until just blended. Stir in 2 tbsp orange juice and cranberries.

Pour mixture over crust. Bake 45-50 minutes or until center is set. Remove from oven and run knife around sides of pan to loosen. Cool at room temperature.

In a small, heavy saucepan, combine orange marmalade and 1 tbsp orange juice, stirring constantly. Remove from heat and refrigerate until thoroughly chilled. Pour glaze over cake.

The original recipe didn't say what size jar... I have a small 250mL jar and am going to use that, I'd think anything larger would be too much
