Unique Christmas Cookie Ideas

So.i know its not Halloween yet but as soon as November hits I start making and freezing my Christmas cookies. We give out boxes of assorted cookies as gifts every year. I always do:
Chocolate chip
Iced sugar cookies
Pecan pie cookies
Brownies
And pumpkin roll

Then I try to experiment and mix it up a little with the rest. I was thinking maybe a red velvet cake roll, cake pops, banana bread... anyone have any unique ideas for other things to do?? fyi I hate no bakes and my rice krispie treats always turn into a total disaster so those are out. What is your favorite cookie recipe? TIA everyone!

My mom always made russian tea cakes I think they r called YUM. ANd those ones that are diamond shaped and you put different fillings inside..

Honestly, my BEST memories of christmas as a kid was making cookies with my mom. I couldnt tell you a single gift I got as a kid, but I remember making cookies every year :)

Christmas mice: I've seen some cute ones with some almond flavor - but you could do any type of dough that will roll into a ball (such as Russian tea cake type recipes). Roll the dough into a ball and slightly pinch one end of it so it is kind of tear-drop shaped. Flatten just a little on the baking sheet, so the pinched end is on one side and the round end is the other way. This is the mouse's body, with the thin end being the face and the round end being the butt. Poke a hole in the wide end just a little bit up from the cookie sheet - with a toothpick or skewer (this will be for the tail). Split a peanut and insert 2 peanut halves sticking up at the narrow end to be the ears. Take some small pieces of raisin and stick below the nuts to form 2 eyes, with another piece at the narrow end to be the nose. Bake according to directions. When done, put a 2-inch piece of shoestring licorice (red or black) into the hole to form the tail. Curl the tail around the body a little so it doesn't take up too much room.

Have you every used a cookie press? You can make all kinds of shapes - snowflakes, trees, etc. Same dough (use any butter cookies recipe), just change the disc on the end of the press to create new shapes. Decorate with different colored sugars.

my favs: my gma's heirloom hermit cookie made with red wine, raisins, & nuts. Absolutely simple & totally yummy.

Russian teacakes (also known as Mexican Wedding Cakes).

Chewy date bars, rolled in powdered sugar. Another heirloom recipe, loaded with nuts & dates.

& a few others. In fact, the list could go on & on. LOVE baking cookies.

When my Sis & I were little, we helped our gma bake on Black Friday. We consistently made over 1000 cookies to share with friends & family. & then gma would bake again & have fresh cookies under the tree for each family member! She rocked at baking!

Just think! A whole freakin' month of cookies! (sigh)

I make linzer cookies...sandwhich cookies with some sort of shape punched out of the middle of the top cookie, giving a peek of whatever filling you use. I usually make a shortbread cookie and fill it with Nutella but you can use a sugar cookie dough and other kinds of filling, like jelly or jam.

I make fudge to add to my cookie presents, it's fun and easy. I also found an amazing and super easy recipe for almond brittle in Parent's magazine last year. It is really, really yummy, I'm sure you can find it on their website.

I also like sandwich cookies, like carrot cake and red velvet cookies too!

Here are my usuals:
Rolled shortbread and whipped shortbread. Can't have Christmas without shortbread!
Not a cookie, but another Christmas must have, butter tarts, or butter tart slice.
Really hard to make, but so worth it, fudge (real fudge, not the fake easy stuff).
Skor bars (made with soda crackers, metled brown sugar and chocolate).
Confetti slice (peanut butter, butterscotch and mini marshmallows).
Lemon slice.

Peppermint bark
Take ritz crackers and spread peanut butter in between two and dip halfway into dark chocolate. Salt/sweet yum.
The Oreo truffles are great, we call them reindeer balls!

We have a great receipt called Cherry Bon Bon's. You make mini Chocolate brownie cupcakea, stick your thumb in the middle to make a dent, add a cherry, drizzle with melted chocolate and then drizzle with cherry juice mixed with powdered sugar. If you want the receipt, e-mail me separate.
