It my life of continuous learning, I have been thrown another curve. My son and his girlfriend have been trying to eat vegan. The are coming for a few days this weekend. I intend to do a meatless Greek spaghetti minus the feta cheese and a vegetable soup. I need more recipes! Anyone have a favorite to share? Maybe even a desert?

So What Happened?

Thanks everyone! I feel much more prepared. New vegan websites and tried and true recipes make it an adventure! I'll go to Market Street today and try to pick up a few new things. The knowlege that margarine is ok and there are good types of milk, makes it better. I have never cooked with tofu. This is the very smart, adventurous son that keeps me on my toes! It keeps me young but sometimes I come along, kicking and screaming!

I would add whatever veggies you like, I personally think mushrooms would be nice, maybe even some nice local mushrooms if you have a good farmer's market nearby. This is a tasty chocolate cake recipe, very simple and falls into the category of "just happens to be vegan" rather than "created as vegan and therefore tastes way too healthy."

Hi there!

I have found good luck with typing my primary ingredients or the name of a dish into the browser with the words "recipe" and "vegan".... such as "taboulleh recipe vegan" (taboulleh is vegan already, by the way, and tastes fabulous made with quinoa instead of bulgar wheat, so there's an idea)...

You know what sorts of dishes your son likes, go with that. Proteins you can use include tempeh and there are a lot of soy products out there. Morningstar makes some 'meat crumbles'; Trader Joe's has good "meatless meatballs"... just be sure to read labels. I'd also just ask your son if they have any tried and true recipes they would like to share, too. AllRecipes has quite a few vegan offerings, too.

Do Mexican. Carnitas and rice and beans.

What I meant was, do carnitas for the meat eaters, and then do veggie tacos for your vegan eaters! I'm a vegetarian, but everyone else in the house eats meat, but we have taco night all the time, because it's easy cooking for non-meat eaters and meat-eaters alike. Do some gauc and salsa, and it's yummy and nutritious.

Best dessert ever..simple, quick and vegan!

Tofu Chocolate Mousse
1 pkg extra firm silken tofu (i use Mori Nu; look for it to say great for desserts)
1/4-1/2 cup vegan chocolate chips
(optional - tbs of powdered sugar)

Put one layer of chocolate chips on a pie plate and microwave for 30 seconds at a time, until melted.

Place tofu, powdered sugar if using and melted chocolate in a blender. Whip until fully blended.

Pour into individual serving dishes and chill at least 2 hours (this is key; helps the flavor).

Serve! Garnish with a vegan non-dairy topping, mint leaves, more chocolate chips, whatever.

So easy. So yum.

Also, plenty of foods are already vegan! Lots of pastas; veggie fajitas; stir-fry (check the sauces used); indian chickpea stew; homemade vegetable noodle soup; tomato and white bean ragout served over fried polenta slices; frozen fruit smoothies for snacks; and so much more.

Try any dish with a vegan meat substitute to replace the meat (i make "fake" vegan goulash all the time using soy crumbles!).

There are ways to get around using eggs as the binder in many recipes.

Like with vegetarians, look for hidden gelatin (found in a lot of yogurts) and animal rennet. Of course you know that vegans go a step further than vegetarians and avoid dairy and eggs, but check with your son to see if he is also avoiding honey and cane sugar (often processed with bone char, unlike beet sugar).

Look up for recipes of Asian, Indian, Lebanese cuisines..they offer many varieties of dishes using vegetables, lentils, beans, and breads/rice. See if you can get tofu to substitute for meat here and there...

You should be able to toss up a variety of salads using greens, vegetables, corn, peas, onions, croutons, pecans, walnuts, and go for vinaigrette type of dressings - herbs, lemons, garlic, olive oil....mix up flavors and salad veggies/condiments to make a variety of salads...

Whole Foods! Their website has lots of delicious recipes that eveyone will love - even the omnivores. If you go their store they have many ready-made vegan meals, snacks and deserts.
