Bridal Luncheon - Need a Good Main Dish Recipe

Hi Ladies, In 3 weeeks, I am hosting a Bridal Luncheon for about 35 people in my home. I am looking for a fancy recipe that is not too difficult. I tried a vegetable lasagne last week but it was too heavy....help! Three weeks is "right around the corner." I have searched and searched for just the right recipe. Thank you so much.
